As many of us fill our grocery carts with those holiday foods that
everyone loves, and even as we begin to purchase gifts for loved ones to
show our appreciation for them, it is important for us to remember
those who are less fortunate than us. I am referring to the 1 in 7
Coloradans who were identified as “food-insecure” by a 2011 USDA survey.
To those unsure of what “food-insecure” is, it means some people are
uncertain of when and what their next meal might be. To many Americans,
that would be an inconceivable feeling, as we are so used to being able
to open our fridge or cupboard and take out what we want. However, this
is a reality for what the USDA identifies as “14.9 percent of U.S.
households [that] were food insecure at some time during 2011.”
As you prepare to celebrate the holidays, please keep the less
fortunate people in mind, and perhaps donate some food, time or money to
one of the many wonderful, dedicated non-profit organizations Colorado
has to address this serious issue.
